Oikos Organic Greek Yogurt

One of my favorite things to eat with breakfast is greek yogurt. For 2 WW points, it is a great way to start off your day right. This morning I had open face egg white sandwiches with Oikos Honey flavored greek yogurt on the side. I am really full for only a 5 point breakfast.

A few little facts about this yummy, thick, tart and creamy yogurt:

*110-120 calories for each 5.3oz container

*13-15 grams of protein
*Comes in plain, vanilla, honey and blueberry

*So much more satisfying than regular yogurt!

"Skinny" Monkey Bread

Here is a super yummy recipe for monkey bread that is low in points/calories. To make it a filling breakfast, I added some banana and eggs to make a great weekend breakfast. Great for Sunday brunch, or for a holiday breakfast.
6 Servings-3 Pts. ea. (about 130 calories)
8 Servings-2 Pts. ea. (about 100 calories)

1 Tube Pillsbury Buttermilk Biscuits (Small Blue Can, comes in packages of 4)
1/4 C Splenda
1 t. Cinnamon
1/4 C Brown Sugar
2 T light butter
2 t. milk

Preheat oven to 400. Spray a pie pan with butter flavored non-stick spray. Cut each biscuit into 4 pieces. (I used a pizza cutter and it worked great) In a large zip lock bag, pour in the cinnamon and splenda. Put the biscuit pieces in the mixture and shake till coated. Place each piece into the pie pan. In a small saucepan, heat the brown sugar, butter and milk. Boil for 1 minute, and then pour over the biscuit pieces. Bake for about 8 minutes. Cut into 6-8 servings.

Skinny Habit of the Week: Eat a Good Breakfast

This sounds more like common sense than a "skinny habit," but this is one habit that really helps in weight loss and maintenance. The days that I either skip breakfast or eat a wimpy one (ie. just grab a bar or something) are the days when I really struggle to eat right.

On those days, I am usually starving by 11am, and then am cranky and miserable until I get some lunch. I am impatient with my daughter, and when I do eat, I usually compensate and eat more. Some days, the compensation doesn't stop with lunch.

I have been in maintenance mode for a couple of weeks now (as I have started my in-vitro process) and have been eating a little more for breakfast than I used to. I am noticing such a difference in my hunger levels. I am noticing that it does carry into the whole day. I am less hungry over-all and more satisfied with the other meals.

Some of my breakfast staples:

Liquid Egg Whites
Alternative Bagels
Fiber One Frosted Mini Wheats
Peanut Butter Puffins or Reg. Puffins w/
Unsweetened Vanilla Almond Milk (40 cals/cup)
Banana or other fruit
Bran Muffins
Greek Yogurt
Oatmeal

I mix and match, for a breakfast of 5 or 6 WW pts. Sometimes I microwave some egg whites and eat them with a bit of light melted cheese on a bagel. Sometimes I have my cereal with fruit and a muffin on the side. Other times I eat some fruit and greek yogurt with eggs, or with cereal. The more filling, the better.

Great Blog and easy breakfast idea

Thanks to Roni, I came across an awesome blog today. The name of it is Dani Spies, which is the author's name. She has great healthy recipes, cooking videos and other great tips. I just learned the truth about white whole wheat flour, and how to properly chop an onion. Check it out if you have a few minutes!

Yesterday I make the yummiest breakfast. It was also super quick to make. I call it the
Easy Microwave Omelette. What I did was chop some veggies (I used bell peppers and tomatoes) and put them into a microwavable plastic container (sprayed with cooking spray) with lid.

Then I put about 1/2 slice of cheese over the veggies. I topped it off with 1/2 C of liquid egg whites, salt and pepper. Then I loosely topped it with the lid, (not on tight) and put it in the microwave. I cooked it until the egg whites were firm.

Wa la! In five minutes you have a great healthy breakfast! For only 2 points!

Fiber One Pancake Mix


This weekend we decided to drive up to my husband's parents house in Lake Arrowhead. My mother-in-law always makes super yummy weekend breakfasts, like pancakes and eggs and either sausage or bacon. It is always very tempting to give in, and most of the time in the past I have. So I was talking to my mother-in-law, and she mentioned that she bought some Fiber One pancake mix. I didn't know there was such a thing. We looked on the box to check out the nutritional info and one serving is only 3 points. The only thing that remained to be seen was how big the serving was. It sounded too good to be true. So this morning, I prepared a single serving for myself (which was nice and easy to do) and added one point worth of extra semi-sweet chocolate chips into the batter. It made 3 good size pancakes! (About 5 inches in diameter) I ate those (dipped in a little sugar-free syrup) with some scrambled egg whites and it was a super filling, indulgent feeling breakfast! I didn't feel deprived at all. I know there are lots of recipes out there for low point pancakes, but sometimes you just want quick and easy. I was going to take a picture, but of course forgot to bring my camera with me.

Breakfast Burrito Pizza

Ok. For real I am starting my posts on this blog. I have been waiting to start my posts until I had photos of recipes, but it seems that either my battery is dead on my camera when I want to take the picture, or I forget. So I have decided to take the photos and upload them later on. Start with the ideas and recipes. This blog will be a constant work in progress.

Blah Blah Blah. This morning I was craving a breakfast burrito. I don't know about anyone else, but I hate low-carb, low-cal tortillas. They all taste funny to me. And I like to keep my breakfast at 4 points or less. So today I thought of a new idea. And it turned out awesome!

Recipe:
1 Serving/4 Pts


1 Alternative Pita (Made by Western Bagel)
3 Egg whites
1/4 C or so of salsa
1/2 C Black Beans-drained (mine were 1 pt for this amount)
2 T Low-fat shredded cheese

Spray frying pan with a little Pam. Scramble the egg whites. When almost done, add salsa and beans. Cook and stir till liquid is mostly evaporated. Spoon on top of the pita, and sprinkle the cheese on top. Bake at 400 for about 5-7 minutes, or until the cheese is melted.

I really enjoyed this alternative to the breakfast burrito I was craving this morning, and it was a big serving for only 4 WW Points!
