Easy Veggie Ideas

What are some great ways to eat lots of veggies throughout the day? Here are some of my favorites:

1. Pita Pizzas or Calzones
-Start with Western Bagel Alternative Pita
-Spoon some low cal pizza sauce
-Pile on the veggies
-Top with a little bit of mozzarella cheese


2. Weight Watcher's 0 point vegetable soup
-Can freeze in individual servings

3. Quick Egg White Veggie Omelet

4. Broccoli Salad (Lasts for a few days in the fridge)

5. Green Giant Valley Fresh Steamers
-Frozen veggies with cheese sauce you steam in the microwave
-1 pt. for huge serving

These are my top 5, what are your ideas?

Awesome, great ideas. I love them. I steam carrots and then dip them in low fat ranch dressing. Also stir fry with coconut oil, its better for you.

Great ways to eat your veggies!

I love raw carrots, celery, radishes, etc. To go with them, I make a dip out of nonfat Greek yogurt, lemon juice and a little salt and pepper.

I have a great Chipotle Hummus recipe that is soooo easy and really good. I love dipping fresh veggies in it--cucumbers, peppers, carrots, celery, etc...It's also great on wraps or sandwiches, rather than mayo.

It has some unique ingredients, but once you find them all and have them on hand, it's super easy to whip together. (I was able to find everything at Smith's Marketplace, though I had to search. My friend found most of it at Macy's). You just toss it all in the food processor. In case you're interested, here is the recipe.

Chipotle Hummus

1 can garbanzo beans

1/4 cup water

2 tablespoons Tahini (sesame seed paste)

2 tablespoons lemon juice

1 tablespoon olive oil

1 roasted red pepper (from a jar)

1 - 2 sun-dried tomatoes

1 chipotle pepper in Adobo sauce (can in Mexican food isle)

1 clove garlic crushed

1 teaspoon cumin

1 teaspoon salt

Just throw all the ingredients in a food processor and blend.

I make homemade pizzas too. I saute the veggies first in a pan. So good. I love all the ideas.

I love using leftover whole wheat pasta and then sauteing it in olive oil, garlic and whatever veggies I have in the fridge (steamed broccoli, peppers, carrots, onion, zucchini, whatever veggies were leftover from dinner the night before). Then sprinkle with a little parmesan. Yum!

My wife would definitely gonna love this meal! She's been a vegetarian for ten years now and she's always looking for scrumptious meals that are perfect for vegetarians. I tried being like her, actually. But honestly, I can't. I always love eating sinful foods! But my dentist here in Greenville, SC has always been advising me to eat healthier foods now because my teeth have gone bad.
